Spicy Grilled BBQ Chicken Sliders & Hawaiian Style Mahi Mahi Sliders 

Fall is officially here and that means football season is in full swing! We absolutely love tailgating and coming up with tasty game day recipes to share with our family and friends. Today we’re sharing with you how KING’S HAWAIIAN® Rolls and the new KING’S HAWAIIAN BBQ Sauces help us elevate our game day menu. 

1) {Spicy Grilled BBQ Chicken Sliders}

King's Hawaiian Rolls Recipe

Ingredients

  • KING’S HAWAIIAN® Rolls (We used both the Original Hawaiian Sweet Rolls and the Jalapeno Rolls – both were delicious!)
  • 2 Roma Tomatoes, sliced
  • 1 Romaine Lettuce Heart (The Eva Mini Romaine hearts we found at HEB are the perfect size for sliders!) 
  • Jar of Organic Dill Pickles
  • Pack of Chicken Tenders (8 tenders feed 4 people -We love the Central Market Organic Chicken Tenders.)
  • 4 Cheddar Cheese Slices cut in half 
  • 1/4 c for basting on the grill and 1/3 c for marinating of KING’S HAWAIIAN®  Big Island Lava Sauce 
  • 1/4 c Maple Syrup
  • 1/3 c Dijon Mustard 
  • 2 tsp Worcestershire sauce
  • Salt and Pepper for seasoning 
  • Toothpicks for holding the sliders together 

Directions

  1. Marinate the chicken tenders in 1/3 cup of the KING’S HAWAIIAN®  Big Island Lava BBQ Sauce. Refrigerate in covered dish for 1-2 hours. You can marinate the chicken tenders longer if you have the time. 
  2. Prep your tomatoes, lettuce, pickles and cheese. 
  3. Make your Maple Syrup sauce: Mix the Maple Syrup, Dijon Mustard and Worcestershire together in a bowl. Taste and adjust to your liking. Set aside. 
  4. Heat your grill to medium high and grill chicken tenders for 4-5 minutes on each side. Baste as you go with the Big Island Lava Sauce. 
  5. During the last 1-2 minutes of grilling the chicken, place a slice of cheddar cheese on top of each tender to melt. 
  6. Set chicken tenders aside to rest. In the meantime toast your KING’S HAWAIIAN® rolls on the grill for about 1 minute. 
  7. Assembly: Take your rolls and add the Maple Syrup sauce to both sides. Place a piece of chicken on the bottom of the roll and then top with tomatoes, pickles and lettuce. Stick a toothpick through the middle to hold in place. 
  8. Enjoy!

2) {Hawaiian Style Mahi Mahi Sliders}

Hawaiian Style Mahi Mahi Sliders

Ingredients

Mahi Mahi

  • KING’S HAWAIIAN® Rolls 
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Cayenne pepper
  • 1 tsp Paprika
  • 12 – 15 oz of Mahi Mahi fillets (skin removed) 
  • 1 tbsp unsalted butter 
  • 2 tbsp EVOO
  • Pineapple rounds (save the juice to add to the slaw) 
  • Salt and Pepper for seasoning 

Creamy Pineapple BBQ Sauce 

  • 1 Lime zested and juiced 
  • 1 Garlic clove, minced 
  • 1/2 c KING’S HAWAIIAN®  Original Sweet Pineapple BBQ Sauce 
  • 1/2 c Light Sour Cream 
  • Salt and Pepper for seasoning 

Iceberg Slaw

  • 1 Lemon zested and juiced 
  • 1/4c Scallions
  • 1/4c Cilantro
  • 2 tbsp Coconut flakes 
  • 2c Iceberg lettuce
  • 1 1/2 tbsp EVOO
  • Leftover Pineapple juice from the pineapple rounds
  • Salt and Pepper for seasoning 

Extras

  • Frank’s Hot Sauce if you want to add more heat! 

Directions

  1. In a bowl combine onion powder, garlic powder, cayenne pepper, paprika, salt, and pepper. Stir to combine.
  2. Use the seasoning blend you just created to coat your Mahi Mahi fillets.
  3. Heat cast iron skillet over medium-high heat. Add in your EVOO and butter. Wait until you see it start to bubble and then add in your Mahi Mahi. 
  4. Cook 6-7 minutes on one side and then finish the cooking on the other side for 1-2 minutes. Transfer to a plate and let rest. 
  5. Preheat your grill or grill pan to medium-high heat and add your pineapple rounds and buns. Toast each pineapple round for a few minutes on each side. Then transfer to a plate. Toast the buns face side down for 1-2 minutes, then transfer to a plate. 
  6. Make your sauce: In a bowl combine sour cream, garlic, lime juice and zest along with the KING’S HAWAIIAN®  Original Sweet Pineapple BBQ Sauce. Taste and season to your liking.
  7. Make your slaw: In another bowl add in the lettuce, cilantro, scallions, EVOO, coconut flakes, pineapple juice, lemon juice and zest. Season with salt and pepper and adjust to your liking. 
  8. Assembly: Take your rolls and add the Creamy Pineapple BBQ Sauce to both sides. Top with Mahi Mahi fillets – note: you can cut them to the appropriate size for each slider. Add the slaw and top off with a grilled pineapple slice and a couple of slashes of hot sauce if you like – we used Frank’s Hot Sauce. Place the top of the bun on and stick a toothpick through the middle to secure. 
  9. Enjoy!
