How to Make Greek Salad in a Mason Jar

Summer is finally here and we are all about fresh, healthy recipes! Especially with pool season and Emily’s wedding coming up we’re focusing on prepping meals ahead of time and being able to have healthy options on the go. This Greek salad and healthy snack recipe below are super fun being that you can take them with you in a cute and practical little mason jar-love it!

Greek Salad in a Mason Jar

Our go to salad is Greek Salad. We usually always already have half of the ingredients in our fridge and pantry. It’s also easy to make and is done in a flash! You can make a Greek salad so many ways and assembling all of the ingredients is half of the fun! We went to our local Sprouts Farmers Market and picked out our favorite ingredients below. Seriously y’all, they have some amazing produce right now!

Greek Salad in a Mason Jar

This salad transports easily in the mason jar and when it’s time to eat all you have to do is pour it out onto a plate or a into a bowl, mix it up and you are good to go!

Greek Salad in a Mason Jar

 INGREDIENTS:

  • 1/2 can garbanzo beans
  • Small can black olives (or whatever olives are your favorite)
  • 1/2 cp halved cherry tomatoes
  • 1 small container artichokes
  • 1 bell pepper diced
  • 1 cucumber diced
  • 1/2 cp chopped romaine lettuce
  • 1/2 cp Feta cheese
  • 1/2 cp EVOO
  • 1/4 cp apple cider vinegar (you can also use lemon juice or red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • 1 tsp dried oregano
  • 1 tsp Honey (you can also use Agave nectar)
  • Salt & Pepper to your liking

INSTRUCTIONS: 

{For the Greek Salad Dressing}

  1. Whisk together the garlic, apple cider vinegar, EVOO, dijon mustard, oregano, honey and salt and pepper. Taste and adjust to your liking.

{Greek Salad Assembly}

  1. Pour some dressing into the bottom of your mason jar
  2. Add the chickpeas
  3. Add the olives
  4. Add the cherry tomatoes
  5. Add the artichokes
  6. Add the bell pepper
  7. Add the cucumber
  8. Add the romaine
  9. Add your feta

{To eat}

  1. Pour ingredients into a bowl and stir with your fork to mix all of the salad ingredients together. You can even top of your salad with a squeeze of fresh lemon for some extra zing!
  2. Enjoy!

{Snack: Sprouts Roasted Garlic Hummus with Carrots and Celery}

We love hummus! Sometimes we even make our own from scratch. Luckily, when you are short on time, there’s always the option of picking up your favorite store bought hummus. This fact makes this healthy appetizer super quick to put together. All you have to do is add hummus, carrots and celery to a mason jar and you are literally done! A healthy snack to take on the go  with you.

Ingredients

  • Your favorite hummus (We love Sprouts Garlic Hummus!)
  • Carrots
  • Celery
  • *** You could even add turnips, radishes and whatever other veggies you like for dipping

Instructions

  1. Fill the bottom of the mason jar with hummus (we used a spatula to fill the jar)
  2. Optional: Then sprinkle on your favorite seasoning – we topped ours off with smoked paprika for an extra kick!
  3. Prep your veggies (we cut off the ends of our carrots and peeled them along with the celery)
  4. Cut your veggies to fit into your mason jar
  5. Optional: Add pita chips
  6. Enjoy!
